Venison Salami

This Air-Dried Salami is produced in the Cotswolds from locally  sourced Wild Venison. We have kept the recipe simple to avoid overpowering the natural flavour of the meat, some ground black pepper, the odd whole green peppercorn and a good glug of Spanish Rjoja.
